mini muffins

ok, i'm back.

and although i've put out the christmas decorations, it's still feeling a little fall-ish around these parts, so it seems okay to post this delicious recipe made back when it actually was fall...

now, this is the recipe i used from two peas & their pod
they call them baked pumpkin donut holes, but let's be honest, when you make them in a mini muffin tin they are mini pumpkin muffins.

but no matter what you call them, they are delicious.

I omitted the allspice but followed the rest of the recipe to make this lovely batter:


which i dolloped into a mini muffin tin:


I only dipped the tops because i embraced them as muffins, not donut holes so i used 2 1/2 T butter, 1/4 cup of sugar, and 2 t cinnamon:



ta-da!



really freaking delicious.

so, almost done

yes, day two is done. 
only one day left of (hopefully) my last exams ever. 
and then i'll be back in business.  


but in the meantime an update: i did something crazy the other day, i ran with my boyfriend.

i know, ridiculous, but it went well, even though it started with this convo:

jonathan: let's go for a run
alex: okay...how long of a run?
jonathan: well i normally do three miles
alex: i've never run three miles in my life.


we ran a slow mile and a half.  
baby steps.

yes yes i know

It's been a while... 
but field exams are coming up
and yes, if i pass, i will be done with exams forever.

wrapping up october

October was pretty packed with fun fall times.  
And it wrapped up in full fall fashion with a visit from Casey.  

We drank some beer.

Well, they drank a lot of beer,

and now we are well into my birthday month! crazy times.

Phoenix. In October. Is awesome.


Jonathan's friend Jake got married. So we rocked it out AZ style.
