food lately: you know, from the last six months (part 2)

don't worry, there's more:

arugula salad with tomatoes and cheesy croutons 
pasta salad with cantaloupe, arugula, and prosciutto (awesome!)
pasta with eggplant, grilled onions, and tomatoes in cream sauce

one of my favorite pizzas i've ever made with eggplant, mozzarella, sun-dried tomatoes, and pesto
and... the strangest pizza i've ever made with leeks, broccoli, and veggie patties, but not terrible

thyme & parmesan biscuits, fried eggs, and left over dressing 
cheese dip nachos (oh yes!)

a delicious feast of roasted sweet potatoes, greens, caramelized onions, chorizo sausage, goat cheese, and crepes (also one of my favs)

plus some sweet treats: 
brownies
and blue bell!

food lately: not really but still good, part 1

I have been cooking (& eating) but I've been behind on posting (obviously).  
So here are some things from the last couple of months...

Tomato-Basil Bread from here plus I added some sun-dried tomatoes

Challah (at a Balla) from my bread cookbook, which is this one if you are interested (it was super delicious) 

Chocolate-Strawberry Pie with Whipped Cream for added deliciousness 

Southern Spread of deviled eggs, cheese, pickles, and crackers (for the derby! so long ago!)

More deviled eggs with a salad of blackberries, goat cheese, and pecans, so very good

and if your curious -- 

what goes in my traditional southern deviled eggs:
egg yolk
mayo 
dijon mustard
pickle juice (from the sweet ones)
salt, pepper, paprika, and cayenne

summer salad

this was made a while ago, but it was delicious if i do say so myself:

tuna i say

Well tis the season, for leftover hardboiled eggs... 
They were put to good use.
Starting with tuna salad.

Ingredients:
Tuna, Sour Cream, Mayo, Sweet Pickles, Seasoning, Eggs.

Directions: 
Mix it all up as seen below.  
It's pretty much just a shake of this and a spoon of that, real scientific. 

 




I like to eat mine with either just saltines, or on a sandwich with tomato and avocado.

food lately: greens

Well I'm pretty sure spring is in full swing in NC, so I've been phasing out of my winter cravings in exchange for delicious greens and things.

Salad with egg, tomato, cucumber, and maple-dijon vinaigrette: 


Greek salad with Feta, tomato, cucumber, olives, falafel, and tzatziki dressing


And finally - caprese salad with pesto

food lately

There has been food lately, of course.
Some winners:

Salad with cucumber, hard boiled egg, and bacon

Pasta with sun-dried tomato, artichokes, and crab

Eggplant parmesan sandwich with basil

Baked penne with ricotta and salad with maple cider vinaigrette 

Repeat of caprese salad with fried eggs because it's that good

Chicken and waffles from Beasley's
It was good but there are better alternatives, too much hype.

heaven in a bite

I had a craving for some caprese salad. So on my last grocery store run I picked up the needed supplies and got to work.  

I started with some olive oil and balsamic on the bottom

Layered on some good mozzarella cheese and basil

and then tomatoes, pepper, and salt


But then I was thinking, this isn't going to keep me full, so I thought I'd fry up a couple of eggs to go along with it, over medium of course.



And then I thought, why not just put those puppies on top of my caprese salad? A fried egg makes everything better, so Ashbash says at least. 


And it was absolutely amazing

Every bite was so good; the yoke wiggled with the olive oil and balsamic to make a delicious dressing and warmed up the cheese. 


I could seriously eat this every day.
Obsessed.
